This week I keep seeing things reminding me to relax, slow down, reconnect with nature, it is so simple, but I nearly always forget how beneficial it is to our souls. Your risotto recipe sounds wonderful too, shame I am on a keto diet - one to add to the 'To Be Cooked' list when I can have carbs again. x

So glad you called attention to the Olympics graphic - So many times I've glossed over it, "another splotch of color matching the 5 rings." But as you described it in its skating (and skiing) context, its vitality jumped out at me.

and ... if could add a suggestion to the mushroom risotto ... consider a splash of truffle oil or truffle powder. I use Sabatino's Tartufi (can get on Amazon). Quite an explosion of flavor.

That documentary sounds great! Thanks for mentioning it-- I always love digging in to the benefits of mediation and mindfulness. I also love that you mention mindful cooking, it can totally feel that way to me, too. The magic of putting individual things together to create a finished (delicious!) product. (I'm on Strava too, I think you can just find me under my name!)
